Ingredients

  •   550 grams sea bass (head-on, tilapia, flounder, or other fish with white flesh, *see footnote 1, scaled, gutted, see footnote 1)
  •   1/2 piece ginger (thumb sized, 1 thumb sliced, 1/2 thumb julienned, see footnote 2)
  •   1 cup green onions (chopped, 6 centimeters /2.5 inches in length)
  •   2 tbsps Shaoxing wine
  •   1 tsp sesame oil
  •   1 tbsp peanut oil (or vegetable oil)
  •   2 chili pepper (dried)
  •   1/2 tsp szechwan peppercorns
  •   2 tbsps soy sauce (seasoned, for seafood)
