Ingredients

  •   2 cups all-purpose flour
  •   1 cup boiling water
  •   2 tbsps vegetable oil
  •   1/2 lb ramps (whites finely sliced, greens roughly chopped)
  •   2 cups napa cabbage (roughly chopped fresh)
  •   1/2 tsp kosher salt
  •   4 ozs bacon (roughly chopped)
  •   4 ozs ground pork (fatty)
  •   1/4 in fresh ginger (disk, roughly chopped)
  •   1 tsp soy sauce
  •   2 tsps sugar
  •   2 tsps toasted sesame oil
  •   1 tbsp Shaoxing wine (or dry sherry)
  •   2 tbsps soy sauce
  •   2 tbsps chinkiang vinegar (or rice vinegar)
  •   1 tsp sugar
  •   1 tsp minced ginger (finely)
  •   vegetable oil (for frying)
