Ingredients

  •   2 tbsps vegetable oil
  •   1/2 onions (thinly sliced)
  •   2 tbsps chopped garlic (finely)
  •   2 tbsps fresh ginger (finely chopped)
  •   8 ozs lo mein noodles (dried)
  •   1 head cabbage (thinly sliced, 3 cups)
  •   1 red bell pepper (small, thinly sliced lengthwise)
  •   1/4 lb shiitake (stems discarded and caps thinly sliced)
  •   1/3 lb snow peas (trimmed and halved crosswise)
  •   1 carrots (peeled and cut into matchsticks)
  •   1/4 cup soy sauce
  •   3 tbsps dry sherry
  •   1 tbsp toasted sesame oil
  •   2 cups cooked chicken (sliced into bite-size pieces)
  •   salt
  •   1/4 cup peanuts (chopped, for sprinkling)
