Ingredients

  •   2 cups all-purpose flour (plus more for dusting)
  •   11/2 tsps kosher salt
  •   1/2 cup boiling water
  •   1/2 cup cold water
  •   1 lb ground chicken
  •   2 tsps sugar (each:, soy sauce, and rice vinegar)
  •   black pepper (to taste)
  •   1 tsp ground ginger
  •   2 stalks green onions (minced)
  •   1/4 cup chicken broth
  •   1 pinch crushed red pepper flakes
  •   oil (for frying the potstickers, I use canola)
