  •   1 bunch spinach (trimmed and washed, about 2 quarts spinach leaves)
  •   1 tbsp red chili peppers (crushed, preferably Chinese)
  •   2 tsps szechwan peppercorns (toasted and ground, divided)
  •   1/4 cup vegetable oil
  •   1 tbsp oil (toasted sesame seed)
  •   1 tbsp soy sauce
  •   2 tbsps chinkiang vinegar (see note above)
  •   1 tbsp bean paste (fermented chili broad)
  •   2 tsps sugar
  •   12 ozs noodles (fresh wheat, see note above)
  •   1/4 cup toasted peanuts (roughly chopped)
  •   1/4 cup mustard (chopped pickled, root, see note above)
  •   2 red chili peppers (small fresh, sliced)
  •   1/4 cup scallion greens (sliced)
