  •   2 tbsps garlic (chopped)
  •   2 tbsps ginger (grated)
  •   3 tbsps sesame paste (or tahini or peanut butter)
  •   3 tbsps soy sauce
  •   2 tbsps black rice vinegar (Chinkiang)
  •   1 tbsp sesame oil
  •   1 tbsp sugar
  •   3 tbsps chili oil (or chili sauce)
  •   1 tsp szechwan peppercorns (toasted and ground)
  •   4 tbsps pickled vegetables (tianjin, optional)
