  •   2 lbs boneless beef chuck roast
  •   8 ozs water chestnuts (sliced, drained)
  •   11 ozs mandarin oranges (sections, reserve juice)
  •   1 cup sliced mushrooms (thickly)
  •   1 onions (small, sliced)
  •   1 cup beef stock
  •   1/3 cup soy sauce (I used low sodium)
  •   1 tbsp sherry (or mirin)
  •   2 tbsps vegetable oil
  •   1 tsp ground ginger
  •   1 tbsp fresh ginger
  •   2 tbsps corn starch
  •   3 green onions (chopped)
