Ingredients

  •   1/4 tbsp olive oil
  •   1 clove garlic (fresh, finely chopped)
  •   1/2 tsp chili flakes
  •   1/4 tbsp fresh ginger (grated)
  •   1/2 tsp ground cumin
  •   1/2 tsp ground coriander
  •   1/4 tsp turmeric
  •   150 grams chicken breast fillets (cut into 3cm strips)
  •   1 stalk celery (including leaves)
  •   25 grams button mushrooms (quartered)
  •   1/4 large carrots (roughly chopped)
  •   1/4 cup snow peas (topped & tailed)
  •   1/8 head cauliflower (broken into florets)
  •   1/2 cup broccoli florets
  •   2 bay leaves
  •   100 ml lite coconut milk
  •   100 ml chicken stock
  •   sea salt
  •   1/4 cup quinoa (uncooked, rinsed, optional)
  •   fresh coriander (or basil to serve)
