Maple Sweetened Banana Oat Cake

Love cakes but don't like empty calories? This cake is made out of Oat-flour which you can easily buy or make yourself. Guilt-free, high in protein and complex carbs.

  • Tablespoon - extra virgin coconut oil
  • 1/3  cup - real maple syrup
  • Large eggs, beaten
  • Cup - mashed banana
  • Cup - Oat Flour*
  • 1 1/4  Teaspoon - Baking Soda
  • 1 1/2   Teaspoon - Baking Powder
  • 1/4  Teaspoon - Salt
  • 1 1/2  Teaspoon - Ground Cinnamon
  • 1/3  Cup - Raisins or Dried Cranberries


Step 1

Preheat Oven to 350 Degrees F . But a 8 X 8 Cake Pan, or 8 inch Diameter cake pan.

Step 2

Combine extra virgin coconut oil and maple syrup together. Add eggs and Mashed banana and beat until well combined.

Step 3

In a separate bowl, sift together flow, baking powder, baking soda, salt and cinnamon.

Step 4

Add the dry ingredients to the wet in three batches, thoroughly combining after each addition.

Step 5

Soak raisins, rinse, and dredge with a bit of oat flour. Fold in to batter.

Step 6

Bake for 30 to 40 minutes, prick a toothpick or satay stick, if it comes our clean. It's done.

Step 7

TIP - soak raisins in water for 5 minutes, drain, and dredge in a bit of oat flour before adding to batter. This prevents the raisins from sinking to the bottom of the cake during baking.
