Ingredients

  •   8 butter lettuce (small-ish ones)
  •   1/4 cup cucumber (peeled, strips)
  •   1/4 cup carrots (peeled, strips)
  •   1/4 cup peanuts (crushed)
  •   lime wedges (serve with extra)
  •   1 tsp olive oil
  •   2 cups mushrooms (chopped, mix of shiitake & cremini or whatever you like)
  •   2 tsps soy sauce (or tamari)
  •   lime (a squeeze of)
  •   rice vinegar (a splash of)
  •   1 cup cooked quinoa
  •   1/4 cup scallions
  •   1/4 cup creamy peanut butter
  •   5 ozs silken tofu (soft or firm)
  •   1 tsp soy sauce (or tamari)
  •   1 clove garlic (minced)
  •   Sriracha (splash of)
  •   rice vinegar (splash of)
  •   1 tbsp sesame oil
  •   1 tbsp rice vinegar (more if you need to temper the spice level)
  •   1 tbsp Sriracha
  •   1 tbsp fresh lime juice
  •   1 pinch sugar
