  •   2 garlic cloves (finely chopped)
  •   2 tsps ginger (grated)
  •   21/2 cups button mushrooms (finely chopped)
  •   1/3 cup cooked quinoa
  •   2 tsps Shaoxing wine
  •   1 tbsp soy sauce (look for a gluten free soy sauce)
  •   1 tbsp kecap manis
  •   1 tsp sesame oil
  •   3 spring onions (thinly sliced)
  •   1/4 cup cilantro leaves (fresh, finely chopped)
  •   1 lettuce leaves (baby cos, separated and washed)
  •   lime wedges (to serve)
  •   red chili peppers (finely sliced, to serve)
