  •   1 tsp soy sauce
  •   1 tbsp Shaoxing wine
  •   1/4 tsp sugar
  •   kosher salt
  •   3 tbsps cooking oil
  •   3 cups napa cabbage (shredded, green cabbage, or bok choy)
  •   1/2 beansprouts (cupe)
  •   1/2 cup shiitake (thinly sliced)
  •   3 tbsps water
  •   2 tsps corn starch
  •   1 pkg spring roll wrappers (about 25 wrappers)
  •   2 qts peanut oil (canola, or vegetable oil)
