  •   200 grams ground pork (lean fat ratio 7:3)
  •   10 cups shrimp (peeled, deveined and chopped into corn kernel sized pieces)
  •   1 cup dried shiitake mushrooms (30 grams / 1 ounce, rehydrated and finely chopped)
  •   2 tbsps Shaoxing wine
  •   2 tbsps light soy sauce
  •   1/2 tbsp peanut oil
  •   1 tsp minced ginger
  •   1 tsp salt
  •   1/4 tsp black pepper
  •   1/2 cup green onions (chopped)
  •   2 tsps sesame oil
  •   40 dumpling wrappers
  •   2 tbsps ginger (slices)
  •   4 tbsps black vinegar
