Ingredients

  •   2 cups napa cabbage (shredded)
  •   2 scallions (halved)
  •   2 inches fresh ginger (piece, quartered)
  •   2 tbsps soy sauce
  •   1 tbsp corn starch
  •   1 tbsp toasted sesame oil
  •   1 tbsp cooking wine (shaoh sing rice, or dry sherry)
  •   1 tsp salt
  •   1/2 tsp pepper
  •   24 wonton wrappers
  •   1 bowl water (for assembling)
  •   2 tbsps soy sauce (– low sodium)
  •   1 tbsp rice vinegar
  •   1 tsp sugar
  •   1 tsp sesame oil
  •   1 tsp chili paste (sambal oelek, or sriracha – optional)
  •   2 tbsps scallions (minced)
