  •   1/4 tsp salt

  •   chow mein noodles (16 ounces Hong Kong-style, see note above)
  •   3 tbsps vegetables (canola, or peanut oil, divided)
  •   6 ozs tofu (five spiced, julienned)
  •   3 ozs flowering chives (Chinese, cut into 2-inch lenghts)
  •   1 carrots (small, cut into fine julienne)
  •   8 ozs beansprouts (trimmed)
  •   3 scallions (cut into fine julienne)
