Ingredients

  •   1 1/4 cups all-purpose flour
  •   8 tablespoons soft butter
  •   2 tablespoons sugar
  •   1 pinch salt
  •   1 teaspoon chopped fresh rosemary
  •   Approx 1/4 cups cold water, more or less as needed
  •   Dry beans for blind baking
  •   6 ounces dark chocolate chips
  •   1 cup heavy cream, divided
  •   1 egg
  •   1/2 cup sugar, divided
  •   1 cup white wine
  •   1 teaspoon ground cinnamon
  •   1 teaspoon pure vanilla extract
  •   3 pears, peeled, halved, and cored. I used Bartlett.
  •   Salt, to taste
