Teochew Braised Duck

A traditional dish normally eaten by Teo Chew Chinese during Chinese New Year.

  •   1 medium size duck
  •   Allspice (wu xiang) powder
  •   Adequate amount of soy sauce
  •   5 cups of water
  •   Adequate amount of thick soy sauce
  •   3 tbsp of sugar
  •   1 ginger cut into big pieces
  •   20 Small red onions with skin peeled


Step 1

Wash the duck thoroughly

Step 2

Cook the water in a big wok put in Allspice powder, sugar, ginger, and red onions

Step 3

Put in the duck after the water is boiled

Step 4

Add in soy sauce and thick soy sauce. Taste the mixture see how is the saltiness

Step 5

Lower the fire level and cover the wok with lid and let the mixture cooked for another 1 hour

Step 6

Turn off the fire and take out the duck and remain the sauce in the wok

Step 7

Cut the duck into piece and serve in a plate. Top the dish with the sauce in the wok
