Ingredients

  •   6 ozs ground turkey (or chicken)
  •   1 tbsp olive oil
  •   2 tsps minced garlic
  •   1 tsp minced ginger
  •   2 scallions (white and green parts chopped)
  •   2 tbsps pickled vegetables (chopped Sichuan, optional)
  •   1 tbsp chinese rice wine (or dry sherry)
  •   1/8 tsp salt
  •   8 ozs dried rice noodles (or other gluten-free noodles)
  •   1 handful dry roasted peanuts (finely chopped)
  •   1/4 cup chicken stock (or water)
  •   2 tbsps low sodium gluten free soy sauce
  •   1/2 tbsp Chinese sesame paste (or tahini)
  •   1 tbsp black rice vinegar (Chinese, or substitute good quality balsamic vinegar)
  •   1 tbsp chili oil (add more if you like it spicier)
  •   2 tsps sesame oil
  •   1 tsp sugar
  •   1/2 tsp ground sichuan pepper
