Ingredients

  •   8 shiitake mushroom caps (fresh, or Chinese dried mushroom* caps, julienned)
  •   1/2 cabbage (small, about 3 cups, shredded, napa or regular cabbage)
  •   2 medium carrot (julienned)
  •   8 ozs bamboo shoots (drained and julienned)
  •   cooking oil
  •   2 cloves garlic (finely minced)
  •   2 tsps fresh ginger (grated)
  •   1 stalk green onions (finely chopped)
  •   2 handfuls beansprouts (fresh)
  •   1 tbsp low sodium soy sauce
  •   1 tsp dark sesame oil
  •   1 tbsp corn starch
  •   50 spring roll wrappers (defrosted)
  •   cooking oil (for frying)
